OLD FASHIONED BROWNIE RECIPE
1/2 cup butter
1 cup granulated sugar
2 eggs
1 tsp vanilla
1/2 cup all purpose flour
1/3 cup unsweetened cocoa powder
1/4 tsp salt
1/4 tsp baking powder
1/2 cup semi sweet choc chips

Preheat oven to 350 degrees. Grease a mini cupcake pan (24 count) Or an 8x8 square pan if you're making traditional brownies.
In a mixing bowl, combine softened butter, sugar, eggs, and vanilla. When mixed, add the flour, cocoa, salt, and baking powder. Lastly, add the chocolate chips and mix again. If using the cupcake pan, divide the batter into the 24 sections evenly or if using a traditional 8x8 pan, pour into a greased baking dish. Bake the mini cupcake pan for 10-12 minutes. If using the traditional 8x8 pan, bake for 25-30 minutes.

STRAWBERRY SWISS BUTTERCREAM. The inspiration for this recipe is from Gretchen Price of Gretchen's Bakery. www.stuffedatthegills.ca/2015/04/gretchens-worlds-… ( I did divide the recipe in half as the original makes a LOT!) I also made a few other tweaks. They are as follows. I added another 1/4 cup of powdered sugar and used all butter (no shortening) I also omitted the vanilla and added the strawberry jam for flavor. Here is the recipe I followed.

3 egg whites
3/4 cup granulated sugar
1 and 1/4 cups powdered sugar
1 cup plus 6 Tablespoons of butter
1/2 cup strawberry jam (your choice)
pink food color if desired

Mix the egg whites with the granulated sugar in a small bowl and place in a double boiler to warm the egg whites and sugar to 150-160 degrees (just enough to dissolve the granules of sugar) OR carefully warm the egg white and sugar mixture in the microwave for about 8 seconds at a time. It usually takes me 2-3 intervals to warm it enough to dissolve the granules. It does NOT have to be super hot. If you get it too hot, you may accidentally cook some of the egg white. You can pick out the cooked pieces if you like- hence the double boiler method is preferred. ;)
Place the warmed egg whites and sugar mixture in a bowl. Mix with a stand mixer or hand held mixer until mixture is white and shiny and stiff peaks form. Add in 1 and 1/4 cups of powdered sugar and 1 cup plus 6 Tablespoons of softened butter. Lastly, add in 1/2 cup of strawberry jam. I also added a few drops of pink food color as well.

Frost the brownies with a star shaped piping tip and top with a strawberry. ENJOY!!
