Hey Friends, I hope you enjoy these favorite comfort food recipes that I make for my family on a regular basis. I call this casserole recipe - 4 in 1- since the recipe is almost the same for both chicken and beef and you can switch up the rice by adding pasta noodles instead. These recipes are a huge hit at my house and I trust they will be at your home too. My kids are both very picky eaters and these are tried and true. The chicken and rice casserole is my son's favorite and the beef version is my husband's favorite. I love that these recipes are quick, easy and also easy on the budget too- which feels like a must these days more than ever! Thank you for watching my video! Hearty Chicken/Beef Casserole(both options are below)


Hearty Chicken Casserole
2 cups of cooked rice (before boiling- this is 1 cup uncooked)
OR
2 cups of cooked pasta noodles- any kind

1 can of cream of chicken soup
2 Tablespoons of mayonaisse
2 Tablespoons of powdered chicken broth (I use Orrington Farms but any powdered broth will work)
1 10 ounce can of chicken
2-4 Tablespoons of sour cream (optional)

Directions- Cook the 1 cup of rice in 2 cups of water. While cooking the rice, (or pasta) combine soup, mayo, powdered broth, canned chicken, and sour cream (if desired) in a bowl. After the rice (or pasta) is cooked, combine everything together. Serve and enjoy!
Makes 4-6 servings.


Hearty Beef Caserole

2 cups of cooked rice (before boiling-this is 1 cup uncooked)
OR
2 cups of cooked pasta noodles-any kind

1 can of cream of mushroom soup
2 Tablespoons of mayonaisse
2 Tablespoons of powdered beef broth ( I use Orrington Farms but
any powdered broth will work)
3/4 to 1 lb. of cooked ground beef
2-4 Tablespoons sour cream (optional)

Directions-Place the beef in a skillet over medium to high heat until thoroughly cooked. Drain the excess oil from the pan. Add in the soup, mayo, powdered broth and sour cream. (if desired) Lastly, add in the rice or noodles. Stir well and enjoy!
Makes 4-6 servings

My Grandma Marion's Granola Recipe (very healthy & mostly honey sweetened 😋)

4 cups of quick oats
1/2 cup wheat germ
1/4 cup brown sugar-packed
1/3 cup sunflower seeds
1/4 cup coconut- packed
1/2 cup chopped nuts
1 Tablespoon vanilla
3 Tablespoons of water
1/2 cup vegetable oil
2/3 cup of honey OR maple syrup (I often do half of each)
1 teaspoon of cinnamon (optional)
Optional- raisins or other dried fruit (wait until AFTER the granola is toasted to add the raisins or they won't taste right)

Directions- Combine the oats, wheat germ, brown sugar, sunflower seeds, coconut, and nuts in a 9x13 pan and mix well.
Add in the vanilla, water, oil and honey (OR maple syrup)
Sprinkle the cinnamon (if desired) over the top evenly and mix well again.
Toast in a 400 degree oven for 15 minutes.
Take out of oven and stir mixture ( I usually use 2 spoons at a time)
Turn oven down to 200 degrees and toast for an additional 12-15 minutes
Take out of oven and stir again
Toast at 200 degrees for another 12-15 minutes
Take out and stir.
Repeat this process until the granola is toasted to your liking.
It usually takes 3-4 toastings for me to be satisfied with it.
Serve with raisins, bananas, or just enjoy the granola plain.
Makes about 6 cups of grano
