Zucchini Fritters
MAKES 8-10 FRITTERS
(15 prep, 30 minute cook time)

-2 cups of grated zucchini (3 small grated zucchini)
-1 tsp sea salt (on top of zucchini)
-1/4 cup fresh parsley
-3 green onion stalks
-1/2 cup feta (I use goat cheese feta)
-5 eggs
-1/2 tsp salt
-1/2 tsp pepper
*I added in red onion, toss in whatever you like! I made a double batch!
