That is the most beautiful colour! Note how it changes colour in response to temperature, being more purple when hot, and more blue when cold. The pH of the cake appears to be around 7, and so the anthocyanins are in a pH range where they can change between blue and pinkish purple depending on temperature. You can adjust the pH to be slightly more alkaline with a very tiny pinch of baking soda, which will result in a more cerulean blue colour, which is very rare in nature, and it probably wont affect the flavour or firmness of the cake as it is thickened with gelatinised starch and agarose rather than with pectin.

I use a few milligrams of baking soda in a purple cabbage dish I make to turn it blue, because I find the colour very appealing.

For anyone who does not have a scale or does not like to eyeball things like me, I experimented a few times and found these measurements to work out for me:

Ingredients: 
9 inch round cake pan
For the base:
30g almond (2/3 Cup)
40g rolled oats (2/3 Cup)
30g oil (5 Tbsp)
30g dates (6 dates)

For the filling:
150g cashew nuts (1 ¼ Cup)
100g blueberry (1 ¼ Cup)
130g sweetener (1 Cup)
200g coconut milk (1 can)
200g water (1 Cup)
4 tsp agar powder
4 tbsp corn or potatoe starch (optional)

200g bluberry (1 Cup)

made this cake for new year's eve and it was delicious! just the right amount of sweetness, the upper part is thick enough yet soft, the base brings a nice texture, the whole blueberries add flavour, not to mention the colour! if anyone is wondering, you can definitely use frozen blueberries, just make sure to pat dry the ones that are put whole on the base once thawed, as it would otherwise make the base too moist to hold itself together.

Wonderful vegan dessert, very nice flavor. On my second attempt I soaked the cashew nuts in water overnight and ran them through a cold press juicer. I got a much smoother final result in the filling. Thanks for the videos!
